Microgreen Salad
Fresh Ginger-Lemon Slaw with Purple Cabbage & Microgreens
Ingredients:
1/2 inch fresh ginger, peeled and grated
Zest of 1 lemon
1/4 cup extra virgin olive oil
Salt and pepper, about ¼ teaspoon each (adjust to taste)
1/2 head purple cabbage, thinly sliced
1/2 head onion, thinly sliced
2–3 cups mixed microgreens (such as radish, fennel, cilantro, amaranth, or pea shoots)
Instructions:
In a small bowl or jar, combine the grated ginger, lemon zest, olive oil, salt, and pepper. Stir or shake well to blend.
In a large mixing bowl, combine the cabbage, red onion, and microgreens. Drizzle the dressing over the top and gently toss until evenly coated.
Serve immediately.
