Ingredients:
2 cups mixed microgreens (like radish, pea shoots, and sunflower)
1 cup cherry tomatoes, halved
1/2 cucumber, thinly sliced
1/4 red onion, thinly sliced
1/4 cup shredded carrots
1/4 cup pumpkin seeds (optional)
Lemon-Tahini Dressing:
2 tbsp tahini
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp maple syrup or agave
Salt and pepper to taste
Water (to thin the dressing)
Instructions:
In a large bowl, combine the microgreens, cherry tomatoes, cucumber, red onion, and shredded carrots.
For the dressing, whisk together tahini, lemon juice, olive oil, maple syrup, salt, and pepper. Add water slowly to reach your desired consistency.
